Chopt was born in 2001 from a simple but bold idea: that a salad could be the most exciting, satisfying, and flavorful meal of the day. Founders Colin McCabe and Marc Glosserman opened the first Chopt Creative Salad Co. in New York City, determined to transform how people thought about healthy eating.

The First Bowl
Colin McCabe and Marc Glosserman open the very first Chopt Creative Salad Co. on West 19th Street in Manhattan. The concept — a customizable, chef-driven salad bar — immediately resonates with New Yorkers craving something fresh.
Expanding Across NYC
With overwhelming demand, Chopt opens four new locations across Manhattan and Brooklyn. The brand's signature chopped salad technique and bold dressings earn a devoted following and city-wide press coverage.
Going National
Chopt crosses state lines, opening flagship locations in Washington D.C. and Philadelphia. The chopt restaurant model — fast, fresh, and customizable — proves itself beyond New York, attracting health-conscious diners nationwide.
